Terroir and cultivation: Arid, stony clay and limestone soil. The vines are all produced organically under the supervision of Ecocert, the soil is cleared and turned over with absolutely no recourse to fertiliser.
Yield: 26 hectolitres/hectare
Harvest : Hand picked in morning into small, open-weave containers.
Vinification : Once hand sorted on tables, the grapes are gravity fed into vats. No yeast. Traditional vinification with alternating cap immersion and juice circulation. Five weeks maceration. Pneumatic pressing
Maturing : 36 months in egg-shaped concrete vats. Neither fined nor filtered
Bottled : june 2012.
Production : 1 800 bottles
Tasting hints : Let the wine breathe in an open bottle or, even better, decant it for at least one hour before serving it at around 15°-17°C
