Land and how we care for it : Arid, stony clay and limestone soil. The vines are all produced organically under the supervision of Ecocert, the soil is cleared and turned over with absolutely no recourse to fertiliser.
Yield : 17 hectolitres/hectare
Harvest : Morning only hand picking into small open-weave containers.
Vinification : Pneumatic pressing, light cold racking. No yeast added. Fermentation in stainless steel vats at medium temperature.
Maturing : 36 month, including 12 in French oak barrels. Bottled in 12 june 2012 Production 3,900 bottles
Tasting hints : Serve at 12 to 14 °C, as an apéritif, with top quality fish in sauces, or with a good Roquefort cheese.
