Soil & cultivation : Arid, stony, lime and clay soil. Vines cultivated organically under supervision of Ecocert. Ploughed, no chemicals or fertilisers.
Yield : 12 hectolitres/hectare
Harvest : Morning only hand picking into small open-weave containers..
Vinification : Pneumatic pressure and gentle racking. No yeast. Fermentation in stainless steel vats at medium temperature.
Maturing : 48 months, including 30 in French oak barrels. Bottled in April 2007, Production 2600 bottles of 50cl
Tasting notes : Serve at a temperature around 12°-14°C as an aperitif, with quality foie gras, Roquefort or ripe Stilton cheeses.
